Fried Squid

A Spanish classic — tender squid rings in a crispy coating, served with garlic mayonnaise and lemon wedges. Simple, quick, and absolutely delicious!

  1. Slice the squid into rings about 5 mm thick. Pour the flour into a freezer bag and season with salt and pepper. Add the capers and shake until everything is well mixed. Place the squid in the bag and shake thoroughly until each ring is thoroughly coated.
  2. Crush the garlic and mix with the mayonnaise. Transfer the sauce to a small bowl for serving.
  3. Pour oil into a large deep skillet so it rises about 7 cm high, but does not fill more than a third of the volume. Place over medium heat and let the oil warm through. You can check if it's ready with a simple test: place a small piece of bread — if it sizzles when it touches the oil, you're ready to go.
  4. Remove a handful of squid from the flour, shake off any excess coating, and carefully lower it into the hot oil. Fry for about 3 minutes until golden and crispy. Remove with a slotted spoon and place on paper towels. Repeat with the remaining squid.
  5. Serve the squid immediately with garlic mayonnaise and lemon wedges.
