Baked Leeks with Rice and Peppers

An aromatic Balkan vegetable dish featuring tender leeks, sweet peppers, and rice. Baked until golden and served hot straight from the oven.
Ingredients
- 500 g Leeks
- 3 pcs Red peppers
- 200 g Rice
- 1 clove Garlic
- 1 l Vegetable broth
- 1 tsp Paprika
- 1 tsp Oregano
- 1 tsp Parsley
- 1 tsp Basil
- pinch Salt
- pinch Black pepper
- to taste Olive oil
Instructions
- Cut the leeks into pieces and sauté in a small amount of olive oil in a pan for 3–4 minutes until lightly golden.
- Add the roasted red peppers, crushed garlic, vegetable broth, paprika, oregano, parsley, and basil. Mix well, then stir in the rice and mix again. Bring the mixture to a boil and simmer for 2 minutes.
- Transfer the mixture to a baking dish at least 5 cm deep. Mix thoroughly and level the surface. Season with salt and pepper to taste.
- Place the baking dish on the lower rack of a preheated 180°C oven and bake for 1 hour until the rice is tender.
- Once cooked, turn off the oven, leave the door slightly ajar, and let the dish cool for 10 minutes before serving.
