Baked Noodles with Lamb, Leek and Rice

A hearty and aromatic Eastern-style dish: tender rice with lamb mince and leek is baked in the oven until golden. Perfect for a family dinner.

  1. Slice the leek and sauté it in a small amount of olive oil over medium heat until it begins to turn golden, approximately 3–4 minutes.
  2. Add the diced onion and lamb mince, continue frying while stirring constantly until the mince turns white and the onion becomes translucent. Make sure the leek does not burn.
  3. Add the rice, mix well and fry for 2–3 minutes until the rice is coated with the meat juices and fat.
  4. Pour in the hot lamb broth, add salt and pepper to taste. Bring to a boil and simmer for 2 minutes.
  5. Transfer the mixture to a large baking dish and place on the lower rack of a preheated oven. Bake at 180 °C for about an hour until all the broth is absorbed and the rice becomes tender.
  6. Turn off the oven, leave the door slightly ajar and allow the dish to cool for 10 minutes before serving.
