Crispy on the outside and tender on the inside, these cornmeal fritters are a classic Jamaican treat, served either as a side dish or sweet delicacy. Perfect for breakfast or afternoon snack.
Ingredients
- 1.5 cup All-purpose flour
- 0.5 cup Cornmeal
- 6 tbsp Sugar
- 2 tsp Baking powder
- 1 tsp Vanilla extract
- 0.5 tsp Salt
- 0.75 cup Milk
- Vegetable oil
Instructions
- Pour oil into a heavy-bottomed pot or deep fryer to a depth of at least 7–8 cm. Heat over medium heat until the temperature reaches 175 °C.
- In a large bowl, combine the all-purpose flour, cornmeal, sugar, baking powder, and salt. Mix the dry ingredients thoroughly.
- Add the vanilla extract and milk, stirring until a smooth dough forms. Then knead the mixture by hand into a ball.
- Pinch off pieces of dough and roll them into long oval-shaped dumplings. You should get approximately 12 pieces.
- Once the oil reaches 175 °C, carefully lower the dumplings into the hot oil and fry on all sides until golden brown. They will cook in about 4–6 minutes.
- Remove the dumplings with a slotted spoon and place on paper towels to drain excess oil. Serve hot.
