Jamaican Beef Patties

  1. Add flour, salt, and turmeric to a large bowl and mix thoroughly. Cut the chilled butter into small pieces and rub it into the flour using your fingertips until the mixture resembles breadcrumbs with small pieces of butter coated in flour.
  2. Pour in ½ cup of ice water and mix with your hands, gathering the dough into a ball. Add the remaining water 2–3 tablespoons at a time until the dough comes together completely.
  3. Divide the dough into 10–12 equal portions, place on a baking sheet, cover with plastic wrap, and refrigerate for 30 minutes.
  4. Add allspice and black pepper to the ground beef, mix well, and set aside.
  5. Heat vegetable oil in a skillet over medium heat. Add the diced onion and cook until translucent, then add the diced hot pepper, garlic, thyme, and ¼ teaspoon of salt. Continue cooking for another minute.
  6. Add the prepared beef to the skillet, stirring and breaking up any clumps, and cook until the meat is no longer pink. Add ketchup and salt to taste.
  7. Pour in 2 cups of water, bring to a boil, then reduce heat and simmer until most of the liquid has evaporated and a thick sauce remains.
  8. Stir in the green onions and allow the filling to cool completely.
  9. Whisk the egg with 1 tablespoon of water to create an egg wash.
  10. On a floured surface, roll out one piece of dough into a circle approximately 5 inches (13 cm) in diameter. Place 3 heaping tablespoons of filling on one half of the circle. Dip your finger in water and run it around the edge of the circle, then fold the dough in half and press the edges firmly together.
  11. Use a fork to crimp the edges of the patty and trim any excess dough for a neat appearance. Place on a parchment-lined baking sheet. Repeat with the remaining dough and filling.
  12. Refrigerate the patties while you preheat the oven to 350°F (175°C).
  13. Before baking, brush each patty with egg wash. Bake for 30 minutes until golden brown.
  14. Cool the patties on a wire rack and serve warm.
