Jamaican Fiery Shrimp

Succulent shrimp in an aromatic broth with fiery Scotch bonnet peppers and spices. A classic Jamaican dish that comes together in just 20 minutes and captivates with its vibrant, rich, and deliciously harmonious flavors.
Ingredients
- 454 g Shrimp
- 2 pcs Scotch bonnet pepper
- 1 tbsp All-purpose seasoning
- 2 tsp Ground annatto
- 2 tsp Allspice
- 0.75 cup Shrimp or vegetable broth
- 0.25 cup Yellow onion
- 2 clove Garlic
- 2 tbsp White vinegar
- 3 pcs Thyme
- to taste Salt
Instructions
- Peel and devein the shrimp and finely mince the Scotch bonnet pepper. In a bowl, combine the shrimp with the pepper, all-purpose seasoning, ground annatto, and allspice. Toss well until the spices evenly coat the shrimp, then let marinate for 10 minutes.
- In a large pot or skillet, heat the broth over medium heat until it reaches a gentle boil. Add the finely chopped onion and garlic, and cook for approximately 2 minutes until softened and fragrant.
- Add the marinated shrimp and thyme sprigs directly to the broth, arranging them in a single layer. Cover with a lid and cook for 5–7 minutes, stirring occasionally, until the shrimp turn bright orange and are completely cooked through.
- Stir in the white vinegar and cook for another minute. Taste the dish and season with salt if needed. Using a slotted spoon, transfer the shrimp to a serving plate and pour the hot broth from the bottom of the pot over them. Serve immediately while hot.
