Jamaican Braised Cabbage

A simple and aromatic dish made with fresh cabbage, vegetables, spices, and butter. Tender, melt-in-your-mouth cabbage — the perfect side dish for meat courses.

  1. Cut the cabbage into thin strips, slice the carrots and onion into thin half-rings. Chop the tomatoes into pieces, and finely mince the garlic and green onions. Slice the pepper into thin strips (remove the seeds if desired). Prepare the sprigs of thyme.
  2. Place all the ingredients — cabbage, carrots, tomatoes, onion, garlic, green onions, thyme, pepper, water, olive oil and butter, salt and black pepper — into a large pot. Cover with a lid and place over medium heat.
  3. Cook on medium heat for 10 minutes, stirring occasionally, so the vegetables cook evenly.
  4. Reduce the heat to low and continue cooking for another 5 minutes, until the cabbage becomes tender and soft. Remove the thyme sprigs and serve.
