Jamaican Curry Shrimp

Succulent shrimp in an aromatic sauce with coconut milk, vegetables, and spices prepared in the Jamaican tradition. This dish cooks quickly and delivers a wealth of tropical flavors.
Ingredients
- 454 g King prawns
- 2.5 tbsp Jamaican curry blend
- 1 tsp All-purpose seasoning
- 2 tbsp Olive oil
- 1 pcs Onion
- 1 pcs Red bell pepper
- 1 pcs Green bell pepper
- 1 pcs Scotch bonnet pepper
- 3 clove Garlic
- 380 ml Unsweetened coconut milk
- 0.5 tbsp Tomato ketchup
- 4 pcs Thyme
- to taste Salt
- to taste Black ground pepper
Instructions
- Season the shrimp with one tablespoon of curry blend and all-purpose seasoning. Set aside for approximately 10 minutes. Meanwhile, slice the onion and bell peppers, finely chop the garlic and hot pepper.
- Heat the olive oil in a large skillet over medium heat. Add the onion, red and green peppers, hot pepper (if using), and garlic. Stir for 5 minutes until the vegetables become soft.
- Add the remaining one and a half tablespoons of curry blend and stir. Cook for another minute to release the aromatic flavors of the spices.
- Pour in the coconut milk, add the marinated shrimp, ketchup, and sprigs of thyme. Ensure the shrimp are completely covered with sauce. Bring to a gentle boil and cook over medium heat, occasionally stirring and turning the shrimp, until they are fully cooked on both sides—this will take approximately 5–6 minutes. Season with salt and black pepper to taste.
