Yaki Udon

Crispy fried udon noodles with vegetables and mushrooms in a sweet soy sauce. This is a simple and quick Japanese dish that is prepared in one pan and is perfect for a weeknight dinner.

  1. Bring water to a boil in a large pot. Add 250 ml of cold water and udon noodles. The cold water is needed so the noodles cook slowly and fry evenly inside. Cook fresh or frozen noodles for 2 minutes or until al dente, dried noodles for approximately 5–6 minutes. Drain the noodles in a colander.
  2. Heat 1 tablespoon of sesame oil in a large skillet or wok over medium heat. Add chopped onion and cabbage, stir-fry for 5 minutes until the vegetables become soft. Add the mushrooms and some of the green onions, cook for another 1 minute.
  3. Pour in the remaining sesame oil and add mirin, soy sauce, sugar, and Worcestershire sauce. Stir well. Add the cooked noodles and stir-fry, stirring constantly, for 3–4 minutes until the dish is hot and the sauce clings to the noodles. Garnish with the remaining green onions and serve immediately.
