Vegetarian Shakshuka

An aromatic dish from Saudi Arabia with tomatoes, vegetables, and spices. Eggs are simmered in a piquant sauce and served with fresh herbs and crispy toast.
Ingredients
- 0.5 pcs Red onion
- 0.5 pcs Red bell pepper
- 400 g Tomatoes
- 0.5 tsp Cumin
- 0.5 tsp Garlic powder
- 0.5 tsp Cayenne pepper
- 1 tsp Paprika
- 2 pcs Eggs
- 1 bunch Parsley
- 1 pinch Red pepper flakes
- 2 pcs Toast
Instructions
- Dice the onion and bell pepper. Heat oil in a skillet over medium heat and sauté the onion and pepper until the onion becomes soft, about 5–7 minutes.
- Add the garlic powder and cook for another 1 minute.
- Add the diced tomatoes, cumin, paprika, and cayenne pepper. Stir well and simmer over medium heat for about 20 minutes until the sauce thickens slightly.
- Make small indentations in the sauce and carefully crack the eggs into them. Cover the skillet with a lid and cook until the egg whites are completely set, about 5–7 minutes.
- Garnish with fresh parsley and red pepper flakes. Serve with fresh toast.
