Fish Soup

A classic Russian fish soup with tender cod and salmon, aromatic with potatoes and carrots. A light and invigorating first course for a family dinner.
Ingredients
- 30 ml Olive oil
- 1 pcs Onion
- 2 pcs Carrot
- 750 ml Fish broth
- 750 ml Water
- 4 pcs Potato
- 3 pcs Bay leaf
- 300 g Cod
- 300 g Salmon
- 1 pinch Black pepper
- 1 to taste Salt
- 1 bunch Fresh dill or parsley
Instructions
- Heat the olive oil in a pot over medium heat. Add the chopped onion and cook, stirring occasionally, until it begins to lightly caramelize. Add the chopped carrot and cook for about 4 more minutes until tender.
- Pour in the fish broth and water, add the diced potatoes, bay leaves, black pepper, and salt to taste. Bring to a boil, then reduce the heat, cover, and simmer for 10 minutes.
- Cut the fish into cubes and carefully add to the soup. Bring to a boil and simmer over low heat for 10–12 minutes until the fish is completely warmed through and the flesh becomes opaque and flakes easily with a fork. Do not overcook!
- Ladle the soup into bowls and garnish with fresh finely chopped dill or parsley. Serve hot.
