Braised Oxtail with Beans

  1. Chop the onion, green onion, and garlic. Grate the ginger and finely mince the pepper. Combine the oxtail with onion, green onion, garlic, ginger, pepper, soy sauce, fresh thyme, salt, and black pepper. Let it marinate for 10–15 minutes.
  2. Heat the vegetable oil in a large skillet over medium heat. Brown the marinated oxtail until golden on all sides.
  3. Transfer the browned oxtail to a pressure cooker and add 350 ml of water. Close the lid and cook under pressure for 25 minutes.
  4. Carefully open the pressure cooker according to the manufacturer's instructions. Add the broad beans and bring the contents to a boil over medium heat.
  5. Mix the cornstarch with 2 tablespoons of water until smooth. Pour the mixture into the skillet with the oxtail and beans, stirring constantly. Cook for another 3–4 minutes until the sauce thickens and the beans are completely tender.
