Grilled Turkish Lamb

Succulent lamb with a yogurt crust, served in a flatbread with vegetables and mint. A quick and aromatic dish that will captivate any lover of Middle Eastern cuisine.

  1. Preheat the grill to maximum heat. Season the lamb legs with salt and pepper, place on the grill and cook for 2 minutes on each side until a beautiful crust forms. The meat should remain rare inside.
  2. Mix the oregano, seasoning and half of the mint with 300 g of yogurt. Generously coat the lamb with this mixture, return to the grill and cook for another 2–3 minutes until the yogurt bubbles and the meat is cooked to your desired doneness.
  3. Let the meat rest on a cutting board for a few minutes. Meanwhile, lightly char the pita on the grill, shred the lettuce and thinly slice the red onion. Mix the remaining mint with the second 300 g of yogurt.
  4. Slice the meat into thick pieces and place in the pita along with the lettuce and yogurt with mint. Squeeze lemon juice on top and serve.
