Christmas Pudding Trifle

A festive English dessert — a layered combination of Christmas pudding, delicate mascarpone cream, vanilla custard and whipped cream with oranges in Grand Marnier. An exquisite classic that can be prepared in advance.
Ingredients
- 3 pcs Oranges
- 1 tbsp Demerara brown sugar
- 2 tbsp Grand Marnier
- 300 g Christmas pudding
- 500 g Vanilla custard
- 250 g Mascarpone
- 284 ml Double cream
- Flaked almonds
- Dark chocolate
Instructions
- Using a sharp knife, peel the oranges, carefully removing all of the white pith (albedo). Slice the oranges as thinly as possible and arrange on a serving plate. Sprinkle with brown sugar, drizzle with Grand Marnier and leave to soak.
- Break the Christmas pudding into large pieces and layer on the bottom of a trifle bowl. Top with the oranges along with all the juices.
- Whip the mascarpone until smooth, then gently fold in the vanilla custard. Layer the mixture over the oranges.
- Lightly whip the cream and layer over the mascarpone mixture. Generously sprinkle with flaked almonds and grated dark chocolate. The dessert can be prepared a day ahead — cover and refrigerate until ready to serve.
