Traditional Croatian Goulash

An aromatic and hearty goulash with tender meat, vegetables, and red wine — a classic Balkan dish that melts in your mouth.

  1. Trim the meat of any membranes and sinews, then cut it into cubes approximately 3×3 cm in size. Rub the pieces with mustard, paprika, salt, and black pepper. Place in the refrigerator for 1 hour.
  2. Heat half of the vegetable oil in a pot and brown the meat in batches on all sides until golden. Transfer the cooked meat to a plate and add the remaining oil to the pot.
  3. Finely chop the onion and peel and grate the carrot. Place the vegetables in the pot and simmer over low heat for 15 minutes, lightly salting them so they soften and brown slightly.
  4. Return the meat to the pot, add the bay leaves and garlic. Pour in the red wine and simmer for 10–15 minutes over low heat to allow the alcohol to evaporate. Then add 2/3 of the prepared water.
  5. Cover the pot with a lid and simmer over low heat for 1 hour, stirring occasionally. After the first hour, add the remaining water and continue cooking for another 30–45 minutes until the meat is completely tender.
  6. Let the goulash cool slightly. Serve topped with freshly chopped parsley and thin slices of hot pepper if you prefer a spicier flavor. Serve with fresh bread and salad.
