Torrijas with Sherry

A Spanish breakfast dream — crispy slices of bread soaked in an egg mixture with delicate sherry and cream. Golden on the outside, tender on the inside, dusted with powdered sugar and served with sour cream.

  1. In a wide shallow bowl, whisk together the eggs, heavy cream, milk, cane sugar, and sherry. Cut the bread in half, then dip each slice into the egg mixture, carefully turning it over to ensure it is thoroughly soaked on both sides.
  2. Let the bread absorb the egg mixture for 10 minutes, turning occasionally. Make sure the slices do not fall apart and do not become too soggy.
  3. Heat the olive oil in a large skillet over medium-high heat. Fry the bread for 3 minutes on each side until it turns a rich golden color and becomes crispy at the edges.
  4. Keep the finished torrijas in a warm place while you fry the remaining slices. Transfer to plates, generously dust with powdered sugar, and serve with sour cream or Greek yogurt.
