Thai Fried Rice with Shrimp and Peas

A fragrant and vibrant Asian-style fried rice with tender king prawns, fresh peas, and crispy fried egg on top. A quick and satisfying dish prepared right before your eyes in a wok.
Ingredients
- 2 tbsp Vegetable oil
- 1 pcs Red onion
- 2 clove Garlic
- 1 pcs Red chili pepper
- 250 g King prawns
- 140 g Brown rice
- 75 g Green peas
- 1 tbsp Soy sauce
- 1 tbsp Fish sauce
- bunch Cilantro
- 4 pcs Egg
- Hot chili sauce
Instructions
- Heat half of the oil in a wok over high heat. Add the sliced red onion, finely minced garlic, and sliced red chili pepper. Cook for 2–3 minutes until golden.
- Add the raw prawns to the wok and cook for 1 minute, stirring constantly.
- Transfer the cooked rice and frozen peas into the wok. Continue to stir-fry vigorously until everything is heated through and begins to turn golden.
- Drizzle the rice with soy and fish sauce, add the chopped fresh cilantro, and mix well. Transfer the fried rice to bowls and keep warm.
- In a separate skillet, heat the remaining oil. Fry 4 eggs, seasoning with salt and pepper to taste, until cooked to your preference.
- Divide the fried rice between four bowls and top each portion with one fried egg. Serve, garnished with fresh cilantro, and accompanied by hot chili sauce if desired.
