Thai Fried Rice with Shrimp and Peas

A fragrant and vibrant Asian-style fried rice with tender king prawns, fresh peas, and crispy fried egg on top. A quick and satisfying dish prepared right before your eyes in a wok.

  1. Heat half of the oil in a wok over high heat. Add the sliced red onion, finely minced garlic, and sliced red chili pepper. Cook for 2–3 minutes until golden.
  2. Add the raw prawns to the wok and cook for 1 minute, stirring constantly.
  3. Transfer the cooked rice and frozen peas into the wok. Continue to stir-fry vigorously until everything is heated through and begins to turn golden.
  4. Drizzle the rice with soy and fish sauce, add the chopped fresh cilantro, and mix well. Transfer the fried rice to bowls and keep warm.
  5. In a separate skillet, heat the remaining oil. Fry 4 eggs, seasoning with salt and pepper to taste, until cooked to your preference.
  6. Divide the fried rice between four bowls and top each portion with one fried egg. Serve, garnished with fresh cilantro, and accompanied by hot chili sauce if desired.
