Thai Pork Curry with Peanuts

  1. Heat the oil in a large pot or sauté pan over medium heat. Add the cilantro stems and green onions, cook for 1 minute. Add the diced pork and fry for 5 minutes until lightly browned.
  2. Stir in the curry paste and peanut butter, mix well and cook for 30 seconds. Add the sugar, soy sauce, coconut milk, and 200 ml of water. Mix thoroughly, cover with a lid and bring to a boil.
  3. Reduce the heat and simmer the curry covered for 15 minutes, stirring occasionally.
  4. Remove the lid, add the young corn and increase the heat. Boil uncovered for another 3 minutes until the corn is cooked and the sauce thickens. Squeeze the lime juice, taste and adjust the salt and spices as needed.
  5. Serve the curry hot over jasmine rice, garnished with cilantro leaves.
