Thai Beef Stew with Lemongrass and Noodles

  1. In a food processor, combine ginger, garlic, lemongrass, cilantro leaves, and one chili pepper. Blend until a smooth paste forms. Heat the oil over low heat and add the paste. Sauté for 5 minutes, stirring constantly.
  2. Add the chopped beef, soy sauce, five-spice powder, sugar, and beef broth. Bring to a boil, cover with a lid, reduce heat, and simmer for 1 hour and 15 minutes.
  3. Remove the lid and simmer for another 15 minutes uncovered until the beef becomes tender and soft.
  4. Just before serving, cook the noodles according to package directions. Drain thoroughly and divide the noodles between two bowls.
  5. Top the noodles with the beef stew. Sprinkle with the remaining sliced chili pepper and cilantro leaves. Serve with lime wedges — each guest can squeeze lime juice to taste.
