Thai Beef Stew with Lemongrass and Noodles

A fragrant and tender Thai beef stew with the characteristic aroma of lemongrass, ginger, and spices. Served with rice noodles and fresh cilantro — an ideal dish for lovers of Asian cuisine.
Ingredients
- 1 tbsp Ginger
- 2 clove Garlic
- 3 pcs Lemongrass stalks
- 2 bunch Cilantro leaves
- 2 pcs Red chili pepper
- 2 tbsp Vegetable oil
- 250 g Beef
- 2 tbsp Soy sauce
- 1 tsp Five-spice powder
- 1 tsp Brown sugar
- 400 ml Beef broth
- 100 g Rice noodles
- 1 pcs Lime
Instructions
- In a food processor, combine ginger, garlic, lemongrass, cilantro leaves, and one chili pepper. Blend until a smooth paste forms. Heat the oil over low heat and add the paste. Sauté for 5 minutes, stirring constantly.
- Add the chopped beef, soy sauce, five-spice powder, sugar, and beef broth. Bring to a boil, cover with a lid, reduce heat, and simmer for 1 hour and 15 minutes.
- Remove the lid and simmer for another 15 minutes uncovered until the beef becomes tender and soft.
- Just before serving, cook the noodles according to package directions. Drain thoroughly and divide the noodles between two bowls.
- Top the noodles with the beef stew. Sprinkle with the remaining sliced chili pepper and cilantro leaves. Serve with lime wedges — each guest can squeeze lime juice to taste.
