Sichuan Beef

A spicy and aromatic dish of beef stir-fried with vegetables in a sauce made with oyster sauce and hot peppers. Classic Chinese cuisine with bold flavors and a pleasant texture.

  1. In a bowl, combine the beef with salt, sesame oil, white pepper, egg white, 2 tablespoons of cornstarch, and 1 tablespoon of vegetable oil. Mix well and let marinate for 15–20 minutes.
  2. Heat 2 tablespoons of oil in a large skillet or wok over medium heat. Add the marinated beef and stir-fry until the meat turns golden and cooks through (5–7 minutes). Transfer the beef to a plate.
  3. In the same skillet, add 1 tablespoon of oil, finely minced ginger, and garlic. Stir-fry for 10–15 seconds until fragrant.
  4. Add all the vegetables (onion, carrot, bell pepper, celery, mushrooms) and stir-fry for 2–3 minutes. Pour in the rice wine and 1 cup of water.
  5. Add the oyster sauce, hot sauce, and sugar. Return the beef to the skillet, add the soy sauce, and mix well. Cook for 2–3 minutes.
  6. In a separate bowl, dissolve 1 tablespoon of cornstarch in 2 tablespoons of cold water, stirring well. Slowly pour the mixture into the skillet, stirring, until the sauce thickens to the desired consistency (1–2 minutes). Serve hot.
