Sweet and Sour Pork

A classic Chinese dish featuring tender pork strips, pan-fried until golden and braised in an aromatic sweet and sour sauce with tomatoes and vinegar.
Ingredients
- 200 g Pork
- 1 pcs Egg
- Water
- 0.5 tsp Salt
- 1 tsp Sugar
- 10 g Soy sauce
- 10 g Cornstarch
- 30 g Tomato paste
- 10 g Vinegar
- Coriander
Instructions
- Crack the egg into a bowl and separate the egg white from the yolk.
- Slice the pork into thin strips.
- Prepare the marinade: mix a pinch of salt, cornstarch, soy sauce, and egg white together. Add the sliced pork to the marinade and let it sit for 20 minutes.
- In a separate bowl, mix the remaining cornstarch with water and vinegar to make a cornstarch sauce.
- Heat oil in a wok to 190°C. Stir-fry the marinated pork until golden, then transfer to a plate.
- In the remaining oil, warm the tomato paste with sugar until the oil and sauce are completely combined.
- Add water to the wok and heat the sweet and sour sauce thoroughly, then add the fried pork to it.
- Pour in the cornstarch sauce and stir quickly until all ingredients are well combined and the sauce thickens.
- Transfer the dish to a serving platter and garnish with coriander before serving.
