Sukuma Wiki

A traditional Kenyan dish of tender kale with onions and creamy butter sauce. Simple, hearty, and incredibly delicious — the perfect side dish for any stew.
Ingredients
- 2 tbsp Vegetable oil
- 2 pcs Red onion
- 454 g Kale
- to taste Salt
- 1 cup Heavy cream
Instructions
- Heat the oil in a large skillet or pot over medium heat until it begins to shimmer. Add the sliced onion and cook, stirring occasionally, until the onion becomes soft and translucent.
- Add the chopped kale to the onion and stir well. Reduce the heat to medium-low, cover with a lid, and cook for 5 minutes.
- Remove the lid, season with salt to taste, and pour in the heavy cream. Continue cooking the uncovered skillet for another 5 minutes, stirring from time to time. The creamy sauce will thicken slightly, creating a divinely tender and creamy dish.
- Serve hot as a side dish to Kenyan stew and alongside ugali.
