A traditional Kenyan dish of tender kale with onions and creamy butter sauce. Simple, hearty, and incredibly delicious — the perfect side dish for any stew.

  1. Heat the oil in a large skillet or pot over medium heat until it begins to shimmer. Add the sliced onion and cook, stirring occasionally, until the onion becomes soft and translucent.
  2. Add the chopped kale to the onion and stir well. Reduce the heat to medium-low, cover with a lid, and cook for 5 minutes.
  3. Remove the lid, season with salt to taste, and pour in the heavy cream. Continue cooking the uncovered skillet for another 5 minutes, stirring from time to time. The creamy sauce will thicken slightly, creating a divinely tender and creamy dish.
  4. Serve hot as a side dish to Kenyan stew and alongside ugali.
