Spotted Dick

A classic British steamed pudding with currants and citrus zest — tender, aromatic, and incredibly comforting, the perfect dessert for a festive table. Served hot with custard, creating an ideal finish to the meal.

  1. Mix flour and salt in a bowl. Add the beef suet, cut into small cubes, currants, sugar, lemon zest, and orange zest. Mix everything together.
  2. Pour in the milk and knead into a dense but moist dough. If necessary, add more milk in small portions.
  3. Shape the dough into a roll approximately 20 cm long. Place it on a large rectangle of parchment paper. Wrap loosely, leaving room for the pudding to rise, and tie the ends with string, like a Christmas cracker.
  4. Set up a steamer over a pot of boiling water, place the pudding in the steamer, cover with a lid, and steam for 1.5 hours. Periodically top up the pot with hot water.
  5. Remove the pudding from the steamer, allow to cool slightly, then carefully unwrap. Slice and serve hot with vanilla custard.
