Spotted Dick

A classic British steamed pudding with currants and citrus zest — tender, aromatic, and incredibly comforting, the perfect dessert for a festive table. Served hot with custard, creating an ideal finish to the meal.
Ingredients
- 250 g Self-raising flour
- 1 pinch Salt
- 125 g Beef suet
- 175 g Black currants (or raisins)
- 80 g Caster sugar
- 1 pcs Lemon
- 1 pcs Orange
- 150 ml Milk
- Vanilla custard
Instructions
- Mix flour and salt in a bowl. Add the beef suet, cut into small cubes, currants, sugar, lemon zest, and orange zest. Mix everything together.
- Pour in the milk and knead into a dense but moist dough. If necessary, add more milk in small portions.
- Shape the dough into a roll approximately 20 cm long. Place it on a large rectangle of parchment paper. Wrap loosely, leaving room for the pudding to rise, and tie the ends with string, like a Christmas cracker.
- Set up a steamer over a pot of boiling water, place the pudding in the steamer, cover with a lid, and steam for 1.5 hours. Periodically top up the pot with hot water.
- Remove the pudding from the steamer, allow to cool slightly, then carefully unwrap. Slice and serve hot with vanilla custard.
