Spanish-Style Spaghetti with Chorizo

  1. Bring a pot of water to a boil over high heat. Meanwhile, cut the chorizo into short strips with scissors, finely chop the parsley, and dice the red pepper (removing the seeds first).
  2. Once the water is boiling vigorously, add the spaghetti, sprinkle generously with salt, stir, and wait for it to return to a boil. Cook for 3 minutes.
  3. Heat olive oil in a large skillet, add the chorizo and pepper. Season generously with black pepper and cook for about a minute until the sausage is heated through and its juices turn red from the paprika.
  4. Scoop half a cup of water from the pot with the spaghetti, then drain the remaining water and transfer the spaghetti to the skillet with the chorizo.
  5. Add the parsley and grated Parmesan, toss well. Pour in the reserved pasta water to make the dish juicy. Serve with extra Parmesan on the side.
