Spanish-Style Spaghetti with Chorizo

An aromatic dish with smoked Spanish chorizo, sweet bell pepper, and fragrant paprika. Quick and simple to prepare—perfect for a weeknight dinner.
Ingredients
- 80 g Chorizo
- 300 g Spaghetti
- 20 g Fresh parsley
- 2 pcs Red bell pepper
- 2 tbsp Olive oil
- 50 g Parmesan cheese
- to taste Black pepper
- to taste Salt
Instructions
- Bring a pot of water to a boil over high heat. Meanwhile, cut the chorizo into short strips with scissors, finely chop the parsley, and dice the red pepper (removing the seeds first).
- Once the water is boiling vigorously, add the spaghetti, sprinkle generously with salt, stir, and wait for it to return to a boil. Cook for 3 minutes.
- Heat olive oil in a large skillet, add the chorizo and pepper. Season generously with black pepper and cook for about a minute until the sausage is heated through and its juices turn red from the paprika.
- Scoop half a cup of water from the pot with the spaghetti, then drain the remaining water and transfer the spaghetti to the skillet with the chorizo.
- Add the parsley and grated Parmesan, toss well. Pour in the reserved pasta water to make the dish juicy. Serve with extra Parmesan on the side.
