Rock Cakes

Crispy British buns with dried fruit — a simple and quick treat for tea time. They are easy to make and turn out incredibly delicious thanks to the butter and vanilla.
Ingredients
- 225 g Self-raising flour
- 75 g Sugar
- 1 tsp Baking powder
- 125 g Butter
- 150 g Dried fruit
- 1 pcs Egg
- 1 tbsp Milk
- 2 tsp Vanilla extract
Instructions
- Preheat the oven to 180 °C. Line a baking tray with parchment paper.
- In a bowl, mix together the flour, sugar, and baking powder. Add cubes of butter and rub with your fingertips until the mixture resembles breadcrumbs. Mix in the dried fruit.
- In a separate bowl, whisk together the egg, milk, and vanilla extract.
- Pour the egg mixture into the dry ingredients and gently stir with a spoon until you have a thick, lumpy dough. If needed, add another teaspoon of milk.
- Using a spoon, drop golf ball-sized portions of dough onto the baking tray, spacing them apart as they will expand during baking.
- Bake for 15–20 minutes until golden brown. Let the cakes cool on the tray for a couple of minutes, then transfer to a wire rack to cool completely.
