Rock Cakes

Crispy British buns with dried fruit — a simple and quick treat for tea time. They are easy to make and turn out incredibly delicious thanks to the butter and vanilla.

  1. Preheat the oven to 180 °C. Line a baking tray with parchment paper.
  2. In a bowl, mix together the flour, sugar, and baking powder. Add cubes of butter and rub with your fingertips until the mixture resembles breadcrumbs. Mix in the dried fruit.
  3. In a separate bowl, whisk together the egg, milk, and vanilla extract.
  4. Pour the egg mixture into the dry ingredients and gently stir with a spoon until you have a thick, lumpy dough. If needed, add another teaspoon of milk.
  5. Using a spoon, drop golf ball-sized portions of dough onto the baking tray, spacing them apart as they will expand during baking.
  6. Bake for 15–20 minutes until golden brown. Let the cakes cool on the tray for a couple of minutes, then transfer to a wire rack to cool completely.
