Šulianec with Poppy Seeds

Slovak potato dumplings with an aromatic poppy seed filling — a delicate, melt-in-your-mouth delicacy that will be loved even by those indifferent to desserts.

  1. Boil the potatoes in their skins until completely cooked. Let them cool completely (preferably leave overnight), then peel and finely mash into a smooth purée.
  2. In a bowl, combine the potato purée, flour, semolina, and a pinch of salt. Knead the dough thoroughly until smooth and no longer sticky.
  3. Divide the dough into portions and roll each into a thin cord approximately 1.5 cm in diameter. Cut into 3 cm pieces and carefully roll between your palms into small dumplings.
  4. Salt the water in a pot and bring to a boil. Carefully lower the dumplings in batches and cook until they float to the surface — this will take 2–3 minutes. Transfer the cooked dumplings to a separate bowl.
  5. In a separate bowl, mix the ground poppy seeds with powdered sugar. Melt the butter and keep it ready.
  6. Pour the hot dumplings with melted butter, then carefully toss with the poppy seed mixture until evenly coated.
  7. Serve the šulianec immediately while warm. If desired, sprinkle with additional powdered sugar or drizzle with honey.
