Šulianec with Poppy Seeds

Slovak potato dumplings with an aromatic poppy seed filling — a delicate, melt-in-your-mouth delicacy that will be loved even by those indifferent to desserts.
Ingredients
- 700 g Potatoes
- 300 g Wheat flour
- 100 g Semolina
- pinch Salt
- 150 g Ground poppy seeds
- 100 g Powdered sugar
- 100 g Butter
Instructions
- Boil the potatoes in their skins until completely cooked. Let them cool completely (preferably leave overnight), then peel and finely mash into a smooth purée.
- In a bowl, combine the potato purée, flour, semolina, and a pinch of salt. Knead the dough thoroughly until smooth and no longer sticky.
- Divide the dough into portions and roll each into a thin cord approximately 1.5 cm in diameter. Cut into 3 cm pieces and carefully roll between your palms into small dumplings.
- Salt the water in a pot and bring to a boil. Carefully lower the dumplings in batches and cook until they float to the surface — this will take 2–3 minutes. Transfer the cooked dumplings to a separate bowl.
- In a separate bowl, mix the ground poppy seeds with powdered sugar. Melt the butter and keep it ready.
- Pour the hot dumplings with melted butter, then carefully toss with the poppy seed mixture until evenly coated.
- Serve the šulianec immediately while warm. If desired, sprinkle with additional powdered sugar or drizzle with honey.
