Chocolate Gateau

  1. Preheat the oven to 180°C. Grease a 20 cm round springform pan with butter and line the bottom with parchment paper.
  2. Break the chocolate into pieces and place in a heat-resistant bowl. Set the bowl over a saucepan of gently simmering water and stir until the chocolate is completely melted. Alternatively, you can melt the chocolate in the microwave for 2–3 minutes, stirring every 30 seconds.
  3. In a separate bowl, beat the butter with sugar until the mixture becomes light and fluffy. Gradually add the eggs one at a time, beating well after each addition. If the mixture begins to separate, add a small amount of flour.
  4. Carefully fold in the cooled melted chocolate and milk, then gently fold in the remaining flour. Continue stirring until you achieve a smooth batter.
  5. Pour the batter into the prepared pan and bake for 50–55 minutes. The cake is done when the center becomes springy and a wooden skewer inserted into the center comes out clean. Let the cake cool in the pan for 10 minutes, then turn out onto a wire rack and allow to cool completely.
