Beef Shoulder Shawarma in Lavash

Aromatic Middle Eastern shawarma with tender meat braised in a fragrant spice blend. Perfect for a hearty lunch or dinner with friends.
Ingredients
- 1 kg Beef shoulder
- 240 ml Beef broth
- 3 tbsp Lemon juice
- 1 tbsp Ground cumin
- 2 tsp Paprika
- 1 tsp Salt
- 1 tsp Ground ginger
- 1 tsp Turmeric
- 0.5 tsp Cayenne pepper
- 0.5 tsp Ground cinnamon
- 0.5 tsp Ground coriander
- 0.25 tsp Ground cloves
- 4 pcs Lavash
- 100 ml Garlic sauce
Instructions
- In the multicooker pot, combine all the spices, beef broth, and lemon juice. Mix the mixture thoroughly.
- Add the beef shoulder, turning it several times to coat completely with sauce on all sides.
- Close the multicooker and cook on the 'Braising' setting for 8–10 hours until the meat is completely tender.
- Once cooked, remove the meat using two forks and shred it into thin strands. Remove any excess fat.
- Skim the fat from the surface of the remaining sauce. Return the meat to the sauce and mix well. Keep warm until serving.
- To assemble: lay out the lavash, spread with garlic sauce, add the meat with sauce, and top with your choice of garnishes (tomatoes, cucumbers, onions).
- Wrap the lavash into a bundle like a burrito, folding the edges tightly.
- Heat the grill and cook the wrapped shawarma on both sides until golden brown and crispy.
