  1. Cut the chicken into medium-sized cubes. Prepare the vegetables: cut the bell pepper into large chunks, slice the zucchini into rounds about 1 cm thick, and separate the red onion into wedges.
  2. In a bowl, mix the red curry paste with coconut milk until smooth. Add the chicken pieces and toss well, ensuring each piece is thoroughly coated with the marinade. Let sit for 10 minutes.
  3. Heat a grill or grill pan over high heat. Thread the skewers alternately with chicken, red pepper, zucchini, and onion. Alternate vegetables and meat for even cooking.
  4. Grill the skewers for 5–8 minutes, turning frequently, until the chicken is fully cooked and the vegetables are golden brown with charred marks.
  5. Serve the hot skewers with herb rice, fresh salad, and a lime wedge for squeezing juice over the top.
