  1. Wrap the chicken breast fillet in plastic wrap and gently pound it with the flat side of a meat mallet to approximately 1.5 cm thickness across the entire surface. Cut into two equal-sized pieces.
  2. Submerge the chicken pieces in pickle brine and let marinate for at least 30 minutes, preferably one hour. For a spicier version, add one teaspoon of Tabasco sauce to the brine.
  3. In one bowl, whisk together the egg and milk. In another bowl, combine the flour, powdered sugar, paprika, salt, black pepper, cayenne pepper, garlic powder, and celery salt.
  4. Remove the chicken from the marinade. Dip each piece in the egg-milk mixture on both sides, then thoroughly coat in the seasoned flour mixture.
  5. Pour olive oil into a skillet to a depth of approximately 1.5 cm and heat to 175°C. Fry each patty for 2 minutes on each side until golden brown and cooked through.
  6. Transfer the patties to a paper towel to remove excess oil. Serve on toasted sesame seed buns, adding a few slices of pickled cucumber.
