Herring in Oil (Polish Appetizer)

A classic Polish appetizer made from marinated herring in aromatic oil with spices. A simple yet refined method of preservation that keeps for several weeks.
Ingredients
- 8 pcs Fresh frozen herring
- 1 pcs Onion
- 0.5 cup Olive oil
- 1 tsp Allspice berries
- 1 tsp Black pepper
- 1 pcs Bay leaf
Instructions
- Cover the herring with cold water and let it soak for at least 1 hour. If the fish is very salty, repeat the procedure several times, changing the water each time.
- Drain the water thoroughly and cut the herring into bite-sized pieces.
- Place the fish in a clean glass jar. Pour olive oil over it, add allspice berries, black pepper, and bay leaf. Seal tightly with a lid.
- Place the jar in the refrigerator for 2–3 days to allow the flavors to fully develop. The appetizer keeps in the refrigerator for up to 2 weeks.
- Serve the herring with finely chopped or thinly sliced onion, lemon slices, and fresh parsley or dill.
