Herring Under a Fur Coat

Herring Under a Fur Coat

A festive layered salad with salted herring topped with a "fur coat" of beets, carrots, potatoes, and mayonnaise. Best assembled in advance to allow the flavors to meld.

Ingredients

Instructions

  1. Boil the vegetables and eggs, cool, and grate them on a coarse grater separately. Finely chop the herring and onion.
  2. Layer on a dish, spreading mayonnaise between each layer: potatoes → herring with onion → carrots → eggs → beets.
  3. Spread mayonnaise over the top layer of beets. Refrigerate for at least 2–3 hours (preferably overnight) to allow the salad to absorb the flavors.
