Shchi

Hearty Russian shchi is a warming cabbage soup with vegetables and aromatic broth, served with sour cream and fresh dill. Simple, soul-satisfying, and endlessly delicious.

  1. In a large heavy-bottomed pot, melt the butter over medium heat. Add the diced onion and sauté, stirring, until translucent.
  2. Add the shredded cabbage, grated carrot, and diced celery. Sauté, stirring frequently, for about 3 minutes—the vegetables should soften slightly.
  3. Add the bay leaf and pour in the vegetable broth. Bring to a boil over high heat, then reduce the heat to low, cover with a lid, and simmer for about 15 minutes until the vegetables are tender.
  4. Add the potato cut into cubes. Bring back to a boil, reduce the heat, cover with a lid, and simmer for another 10 minutes until the potato is cooked through.
  5. Add the diced tomatoes (or canned tomatoes with their juice). Bring the soup to a boil, reduce the heat, and simmer uncovered for 5 minutes. Season with salt and pepper to taste.
  6. Remove and discard the bay leaf. Ladle the shchi into bowls and serve with sour cream and fresh dill.
