Shchi

Hearty Russian shchi is a warming cabbage soup with vegetables and aromatic broth, served with sour cream and fresh dill. Simple, soul-satisfying, and endlessly delicious.
Ingredients
- 3 tbsp Unsalted butter
- 1 pcs Onion
- 1 pcs White cabbage
- 1 pcs Carrot
- 1 pcs Celery (stalk)
- 1 pcs Bay leaf
- 8 cup Vegetable broth
- 2 pcs Potato
- 2 pcs Tomatoes
- to taste Sour cream
- to taste Fresh dill
Instructions
- In a large heavy-bottomed pot, melt the butter over medium heat. Add the diced onion and sauté, stirring, until translucent.
- Add the shredded cabbage, grated carrot, and diced celery. Sauté, stirring frequently, for about 3 minutes—the vegetables should soften slightly.
- Add the bay leaf and pour in the vegetable broth. Bring to a boil over high heat, then reduce the heat to low, cover with a lid, and simmer for about 15 minutes until the vegetables are tender.
- Add the potato cut into cubes. Bring back to a boil, reduce the heat, cover with a lid, and simmer for another 10 minutes until the potato is cooked through.
- Add the diced tomatoes (or canned tomatoes with their juice). Bring the soup to a boil, reduce the heat, and simmer uncovered for 5 minutes. Season with salt and pepper to taste.
- Remove and discard the bay leaf. Ladle the shchi into bowls and serve with sour cream and fresh dill.
