Rice Noodle Salad with Smoked Salmon

A light Vietnamese salad with crispy noodles, tender smoked salmon, and vegetables in an Asian honey-soy dressing. Perfect for a quick and satisfying lunch.
Ingredients
- 125 g Rice noodles
- 200 g Sugar snap peas
- 2 tsp Sesame oil
- 4 pcs Green onions
- Fresh cilantro
- 150 g Smoked salmon flakes
- Pretzels
- 3 tbsp Soy sauce
- 1 tbsp Honey
- 1 tbsp Lemon juice
- 1 tbsp Peanut oil
- 1 clove Garlic
- Ginger
Instructions
- Pour boiling water over the rice noodles in a large bowl, making sure the water completely covers them. Add the sliced sugar snap peas and let sit for 4 minutes. Drain the noodles in a colander, rinse with cold running water until completely cooled, and allow the water to drain. Transfer to a bowl and toss with sesame oil.
- Prepare the dressing: mix together soy sauce, honey, lemon juice, peanut oil, minced garlic, and ginger to taste. Stir well until smooth.
- Place the green onions, cilantro, and smoked salmon on top of the noodles. Drizzle with dressing and toss thoroughly. Serve with pretzels or a bread roll.
