Niçoise Salad with Tuna

A classic French salad with crispy potatoes, tender tuna, and hard-boiled eggs. Light, satisfying, and absolutely delicious.
Ingredients
- 450 g Potatoes
- 2 tbsp Olive oil
- 4 pcs Eggs
- 1 tbsp Red wine vinegar
- 2 tbsp Capers
- 50 ml Sunflower oil
- 0.5 pcs Red onion
- 100 g Spinach
- 400 g Canned tuna
Instructions
- Preheat the oven to 200°C. Cut the potatoes into cubes, toss with 2 teaspoons of olive oil, and season with salt and pepper to taste. Spread on a baking sheet and roast for 20 minutes, stirring halfway through cooking, until the potatoes are golden and crispy.
- While the potatoes are roasting, place the eggs in a pot of cold water, bring to a boil, and cook for 8–10 minutes depending on how hard-boiled you prefer them. Remove from heat, plunge the eggs into ice water for a few minutes, then peel and cut in half.
- In a large salad bowl, whisk together the remaining olive oil, sunflower oil, red wine vinegar, and capers. Add the shredded red onion, spinach, tuna, and cooked potatoes, and toss gently. Divide among plates, top with egg halves, and serve immediately.
