Fish Fofoس

Portuguese-style cod patties with potatoes and aromatic spices — crispy on the outside and tender on the inside. Served with a spicy onion salad and mango chutney.

  1. Place the fish in a covered pot and add enough water to completely cover it. Bring to a boil and simmer over low heat with the lid on until cooked through. Drain the water and flake the fish, removing any bones.
  2. In a large bowl, combine the flaked fish, potatoes, green chili, fresh cilantro, cumin seeds, black pepper, garlic, and ginger. Season with salt to taste, add rice flour and one egg, and mix well. Divide the mixture into 15 portions and roll into small cylinders (fofoس).
  3. Beat the remaining two eggs in one bowl. Prepare breadcrumbs in another bowl. Dip each fofos alternately into the beaten egg, then into the breadcrumbs. Place on a plate and chill in the refrigerator.
  4. Heat 1 cm of vegetable oil in a large skillet over medium heat. Fry the fofoس in batches, cooking for 2 minutes on each side, turning carefully, until golden brown. Transfer to paper towels. Repeat with the remaining fofoس.
  5. For the onion salad, mix sliced onion, fresh cilantro, and lemon juice, and season with salt to taste. Serve the fofoس with the onion salad and mango chutney.
