Stew of Mollusks, Chorizo and White Beans

A Spanish stew with creamy white beans, aromatic chorizo and tender mollusks—a true celebration of seafood flavors in every spoonful. The dish is simple and quick to prepare, perfect for a dinner with friends.
Ingredients
- 50 g Chorizo
- 1 pcs Onion
- 1 clove Garlic
- to taste Fresh parsley
- 200 ml Vegetable broth
- 400 g Canned tomatoes
- 400 g Canned white beans
- 1 tsp Sherry vinegar
- 600 g Mollusks (littleneck clams)
- to taste Crusty bread
Instructions
- In a large skillet with a lid over medium heat, sauté the chorizo until browned and the fat renders. Add the diced onion and cook for 5 minutes until softened. Then add the minced garlic and chopped parsley, and cook for another minute.
- Pour in the broth and canned tomatoes. Bring to a boil, reduce the heat, add the beans and sherry vinegar. Simmer for 10 minutes until the liquid reduces slightly.
- Arrange the mollusks over the surface of the stew, cover with the lid and steam for 2–4 minutes, shaking the skillet occasionally, until all the shells have opened. Taste and season with salt if needed (the mollusks may already be salty). Sprinkle with chopped parsley and serve with crusty bread.
