Green Bean Purée (Snijbonen Stamppot)

A traditional Dutch dish — a delicate purée of potatoes and green beans with cheese and bacon. Simple, hearty, and homely comfort food.
Ingredients
- 400 g Green beans
- 800 g Potatoes
- 1 pcs Onion
- 1 clove Garlic
- 25 g Butter
- 100 ml Milk
- 100 g Hard cheese
- 1 tbsp Mustard
- 75 g Bacon
- to taste Salt
- to taste Black pepper
Instructions
- Rinse the green beans and cut them into pieces. Place in a pot of salted boiling water.
- Cook the beans for about 10 minutes until al dente, then drain and set aside.
- Meanwhile, cut the potatoes and boil them in salted water until tender, approximately 15–20 minutes.
- In a small skillet, melt the butter, sauté the chopped onion until transparent. Add the minced garlic and cook for another minute. Add the boiled beans and sauté for a few minutes, stirring occasionally.
- Drain the cooked potatoes and mash with a potato masher. Add a piece of butter and a little milk, then fold in the bean and onion mixture. Sprinkle with grated cheese, season with salt, pepper, and mustard. Mix well.
- Cut the bacon and fry it in a skillet until crispy. Serve the bacon on top of the warm purée.
