Green Bean Purée (Snijbonen Stamppot)

A traditional Dutch dish — a delicate purée of potatoes and green beans with cheese and bacon. Simple, hearty, and homely comfort food.

  1. Rinse the green beans and cut them into pieces. Place in a pot of salted boiling water.
  2. Cook the beans for about 10 minutes until al dente, then drain and set aside.
  3. Meanwhile, cut the potatoes and boil them in salted water until tender, approximately 15–20 minutes.
  4. In a small skillet, melt the butter, sauté the chopped onion until transparent. Add the minced garlic and cook for another minute. Add the boiled beans and sauté for a few minutes, stirring occasionally.
  5. Drain the cooked potatoes and mash with a potato masher. Add a piece of butter and a little milk, then fold in the bean and onion mixture. Sprinkle with grated cheese, season with salt, pepper, and mustard. Mix well.
  6. Cut the bacon and fry it in a skillet until crispy. Serve the bacon on top of the warm purée.
