Maple Pudding Cake

A traditional Canadian dessert — a tender vanilla pudding soaked in fragrant maple syrup with a caramel sauce. A magical combination of soft batter and rich sauce that forms during baking.
Ingredients
- 115 g Butter
- 200 g Sugar
- 2 pcs Eggs
- 1 tsp Vanilla extract
- 250 g All-purpose flour
- 1 tsp Baking powder
- 310 ml Milk
- 375 ml Maple syrup
- 300 g Brown sugar
- 375 ml Heavy cream
- 75 g Butter
Instructions
- In a large bowl, using an electric mixer, beat the butter with sugar until light and fluffy.
- Add the eggs and vanilla extract, mix well.
- In a separate bowl, combine the flour with baking powder.
- Alternately add the flour mixture and milk to the butter mixture, beginning and ending with the flour mixture. Mix after each addition.
- Pour the batter into a buttered 13x9 inch baking dish.
- In a large saucepan, combine the maple syrup, brown sugar, heavy cream, and butter. Bring to a boil over medium heat, stirring constantly.
- Reduce the heat and simmer the sauce for another 2 minutes, stirring, until it thickens slightly.
- Carefully pour the hot sauce over the batter in the dish.
- Place in a preheated oven and bake at 320°F for about 35 minutes, until the pudding turns light brown and a toothpick inserted in the center comes out clean.
