Maple Pudding Cake

A traditional Canadian dessert — a tender vanilla pudding soaked in fragrant maple syrup with a caramel sauce. A magical combination of soft batter and rich sauce that forms during baking.

  1. In a large bowl, using an electric mixer, beat the butter with sugar until light and fluffy.
  2. Add the eggs and vanilla extract, mix well.
  3. In a separate bowl, combine the flour with baking powder.
  4. Alternately add the flour mixture and milk to the butter mixture, beginning and ending with the flour mixture. Mix after each addition.
  5. Pour the batter into a buttered 13x9 inch baking dish.
  6. In a large saucepan, combine the maple syrup, brown sugar, heavy cream, and butter. Bring to a boil over medium heat, stirring constantly.
  7. Reduce the heat and simmer the sauce for another 2 minutes, stirring, until it thickens slightly.
  8. Carefully pour the hot sauce over the batter in the dish.
  9. Place in a preheated oven and bake at 320°F for about 35 minutes, until the pudding turns light brown and a toothpick inserted in the center comes out clean.
