Spiced Smoked Grilled Chicken

  1. Prepare the marinade: crush the garlic with a pinch of salt in a mortar. Add lemon zest and juice, curry, red pepper flakes, olive oil, and season generously with black pepper. Mix thoroughly until you have a smooth paste. Alternatively, you can prepare this in a blender.
  2. Coat the chicken thighs generously with marinade on all sides and set aside while the grill heats up.
  3. Once the grill is well heated, arrange bundles of rosemary and thyme on the grate. Place the chicken thighs skin-side up directly on the herbs. Close the grill lid if you have one. Cook for about 10 minutes over the smoke until the meat starts to brown.
  4. Flip the thighs and continue cooking for another 20–30 minutes, turning occasionally, until the meat develops a beautiful charred appearance from the herbs and is cooked through to the bone.
