Spiced Smoked Grilled Chicken

Juicy chicken thighs with smoky flavor and aromatic spices, cooked over charcoal with herbs. The perfect barbecue dish with a golden crust and tender meat falling off the bone.
Ingredients
- 2 clove Garlic
- 1 pcs Lemon
- 2 tbsp Curry
- 1 pinch Red pepper flakes
- 3 tbsp Olive oil
- 1 to taste Black pepper
- 12 pcs Chicken thighs
- 2 bunch Rosemary
- 2 bunch Thyme
- 2 pcs Bay leaf
Instructions
- Prepare the marinade: crush the garlic with a pinch of salt in a mortar. Add lemon zest and juice, curry, red pepper flakes, olive oil, and season generously with black pepper. Mix thoroughly until you have a smooth paste. Alternatively, you can prepare this in a blender.
- Coat the chicken thighs generously with marinade on all sides and set aside while the grill heats up.
- Once the grill is well heated, arrange bundles of rosemary and thyme on the grate. Place the chicken thighs skin-side up directly on the herbs. Close the grill lid if you have one. Cook for about 10 minutes over the smoke until the meat starts to brown.
- Flip the thighs and continue cooking for another 20–30 minutes, turning occasionally, until the meat develops a beautiful charred appearance from the herbs and is cooked through to the bone.
