Portuguese Prego with Green Piri-Piri

A juicy sandwich with marbled beef marinated in olive oil and vinegar, and a spicy green sauce. A classic Portuguese dish that is quick and easy to prepare.

  1. Rub the steaks with garlic. Place them in a resealable bag, add olive oil, wine vinegar, and parsley stems. Seal the bag, mix the contents thoroughly, then pound the steaks several times with a rolling pin to tenderize the meat. Marinate in the refrigerator for 1–2 hours.
  2. Prepare the green sauce: place basil leaves, parsley, jalapeño, vinegar, green onions, garlic, sugar, and 1 tablespoon of water in a blender. Blend until you reach a smooth consistency. You will have more sauce than needed for this recipe, but it keeps for a week in an airtight jar.
  3. Heat a grill or skillet over high heat. Remove the garlic and parsley stems from the steaks, season generously with salt and pepper. Cook the steaks for 2 minutes on each side, then transfer to a plate. Place the ciabatta halves on the plate cut-side down to absorb the meat juices.
  4. Slice the steaks and place them in the rolls with green sauce and arugula. Serve immediately.
