Polish Nalesniki

Thin, delicate pancakes from a traditional Polish recipe, perfect for a sweet breakfast or dessert. Serve them with your favorite filling—jam, cottage cheese, or fresh fruit.

  1. Pour flour into a large bowl, add eggs, milk, water, salt, and sugar. Mix thoroughly with an electric mixer or whisk until you have a smooth, uniform batter without lumps.
  2. Add melted butter to the batter and mix well. Alternatively, if you prefer, you can omit the butter from the batter and brush the skillet with butter before frying each pancake.
  3. Heat a non-stick skillet over medium heat. Pour a small amount of batter into the center of the skillet and immediately begin tilting and rotating the skillet in different directions so the batter spreads evenly in a thin layer across the entire surface.
  4. Fry the pancake until it begins to slightly separate from the edges of the skillet and the top surface is no longer wet. Flip it over and quickly fry the other side.
  5. Transfer the finished pancake to a plate. Repeat the process with the remaining batter.
  6. Serve the nalesniki hot with a filling of your choice—jam, condensed milk, cottage cheese, fresh berries, or fruit.
