Jam Cookies

Canadian cookies with a crispy exterior and tender crumb, generously spread with your favorite jam. Perfect with tea and will be a highlight of any tea time.
Ingredients
- 240 g Butter
- 200 g Sugar
- 1 pcs Egg
- 120 ml Molasses
- 1 tsp Vanilla extract
- 2 tsp Baking soda
- 45 ml Water
- 480 g Wheat flour
- 1 tsp Cinnamon
- 2 tsp Salt
- 480 ml Jam
Instructions
- Preheat the oven to 180°C. Line a large baking sheet with parchment paper.
- In a mixer bowl with a whisk attachment, beat the butter with sugar and egg until smooth. Add molasses and vanilla extract, mix until you have a smooth consistency.
- Dissolve the baking soda in water and add to the butter mixture. Mix for about another minute until fully combined.
- In a separate bowl, mix the flour, cinnamon, and salt. Gradually add the dry ingredients to the wet mixture, stirring on low speed. Scrape the dough from the sides of the bowl with a spatula to ensure everything is well combined. The dough should be pliable and easy to shape.
- Using a small spoon, portion the dough, roll the pieces into balls, and place them on the prepared baking sheet. Flatten each ball into a thin disc using the bottom of a glass lightly dusted with flour or a damp palm.
- Place the baking sheet with cookies in the preheated 180°C oven and bake for 10–12 minutes until lightly golden. Remove from the oven and let cool for at least 10 minutes.
- When the cookies have completely cooled, assemble the sandwich cookies: spread at least two teaspoons of jam on one piece and top with another cookie. Serve with hot tea.
