Anzac Biscuits

Crispy Australian oatmeal cookies with coconut and golden syrup — famous and incredibly simple to make.
Ingredients
- 85 g Rolled oats
- 85 g Coconut shavings
- 100 g Wheat flour
- 100 g Sugar
- 100 g Butter
- 1 tbsp Golden syrup
- 1 tsp Baking soda
Instructions
- Preheat the oven to 180°C. Mix the rolled oats, coconut, flour, and sugar in a bowl. Melt the butter in a saucepan and stir in the golden syrup. Dissolve the baking soda in 2 tablespoons of boiling water and fold into the butter and syrup mixture.
- Make a well in the dry ingredients, pour in the butter and syrup mixture, and gently stir until just combined.
- Drop spoonfuls of batter onto greased baking trays, spacing them about 2.5 cm apart (leave room — the biscuits will spread). Bake in batches for 8–10 minutes until golden, then cool on a wire rack.
