Parkin

A traditional British spiced cake made with oatmeal, black treacle, and ginger. This treat becomes softer and stickier the longer it sits—it's best made several days before serving.
Ingredients
- 200 g Butter
- 1 pcs Egg
- 4 tbsp Milk
- 200 g Golden syrup
- 85 g Black treacle
- 85 g Brown sugar
- 100 g Oatmeal
- 250 g Self-raising flour
- 1 tbsp Ground ginger
Instructions
- Preheat the oven to 160°C. Butter a square baking tin (22×22 cm) and line it with parchment paper. Lightly whisk the egg together with the milk using a fork.
- In a large saucepan over low heat, slowly melt the golden syrup, black treacle, brown sugar, and butter together until the sugar is completely dissolved. Remove from the heat. In a separate bowl, mix the oatmeal, flour, and ground ginger, then add this mixture to the syrup. Using a fork, stir in the egg and milk mixture until smooth.
- Pour the batter into the prepared tin and bake for 50–60 minutes until the cake is firm and a light crust forms on the surface. Cool in the tin, then wrap tightly in parchment paper and foil. If you can wait 3–5 days before serving—all the better: the cake will become even softer and stickier (keeps for up to 2 weeks).
