Parakuka (Caramelized Peanuts)

Crispy peanuts in golden caramel — a classic confection that melts in your mouth. A simple recipe with minimal ingredients, perfect as a snack or dessert with tea.
Ingredients
- 1180 g Unsalted peanuts
- 200 g Sugar
- 240 ml Water
- 1.3 g Salt
Instructions
- In a large heavy-bottomed saucepan, combine the peanuts, sugar, and water. Bring to a boil and cook over medium heat, stirring occasionally, until the syrup evaporates completely and the peanuts are coated with caramel. This will take about 10 minutes — the peanuts should become crumbly and begin to crackle.
- Spread the caramelized peanuts in a single layer on an oiled baking sheet measuring 38×25×2.5 cm. Sprinkle evenly with salt.
- Bake at 150°C for 30–35 minutes until the peanuts are completely dry and have acquired a light golden hue. Stir occasionally to ensure even drying.
- Allow the parakuka to cool completely at room temperature, then transfer to an airtight container for storage.
