Seafood Paella

A classic Spanish dish with rice, seafood cocktail, and chorizo. An aromatic and hearty paella with tender seafood and piquant notes of turmeric — the perfect choice for special dinners.
Ingredients
- 1 tbsp Olive oil
- 1 pcs Leek
- 110 g Chorizo
- 1 tsp Turmeric
- 300 g Rice
- 1 l Fish stock
- 200 g Green peas
- 400 g Seafood (frozen mixed blend)
Instructions
- Heat the olive oil in a deep skillet over medium heat. Add the chopped leek and simmer for 5 minutes without browning until it becomes soft. Then add the sliced chorizo and cook until it releases its oils and spices.
- Sprinkle the rice with turmeric and stir well to coat it evenly with oil and spices. Slowly pour in the hot fish stock and bring the mixture to a boil.
- Reduce the heat and simmer the rice over low heat for about 15 minutes, stirring occasionally, until the rice absorbs most of the liquid.
- Add the green peas and cook for another 5 minutes. Then add the frozen seafood and stir. Cook for 1–2 minutes until the seafood is completely heated through and the rice is done. Season with salt and pepper to taste. Serve immediately with lemon wedges.
