Ingredients
- 125 g Rice noodles
- 200 g Tiger prawns
- 2 tbsp Vegetable oil
- 2 tbsp Fish sauce
- 2 tsp Cane sugar
- 0.5 tsp Cayenne pepper
- 2 pcs Lime
- 4 pcs Green onions
- 140 g Mung bean sprouts
- 25 g Peanuts
- Fresh cilantro

Instructions
- Place the rice noodles in a large heat-proof bowl, pour boiling water over them, and let sit for 4 minutes. Then drain the water and cool the noodles under cold running water.
- In a small bowl, mix the lime juice, cayenne pepper, sugar, and fish sauce. Prepare all remaining ingredients and arrange them next to the stove.
- Heat the oil in a wok or large skillet. Stir-fry the prawns until cooked through, about 2–3 minutes. Add the green onions and noodles, stirring well. Pour in the lime and fish sauce mixture, add the mung bean sprouts and half of the peanuts with cilantro. Cook for another 1 minute, stirring constantly, until everything is heated through.
- Transfer the Pad Thai to a large serving dish, sprinkle with the remaining peanuts and cilantro. Serve with lime wedges and sweet chili sauce.
