English-Style Vegetable Stew

A hearty vegetable stew with lentils and aromatic spices—the perfect dish for a vegetarian table. Served with rice, mashed potatoes, or quinoa.

  1. Heat the oil in a large pot over medium heat. Chop the onion and add it to the oil. Cook for 5–10 minutes until the onion becomes soft and translucent.
  2. Add the minced garlic, paprika, cumin, and dried thyme. Dice the carrot, celery, and both bell peppers. Place them in the pot and sauté for 5 minutes, stirring occasionally.
  3. Chop the tomatoes and zucchini. Add the tomatoes, vegetable broth, zucchini, and sprigs of fresh thyme to the pot. Bring to a boil and cook for 20–25 minutes over medium heat.
  4. Remove the thyme sprigs. Add the lentils, stir, and bring the stew back to a boil. Simmer for another 5–7 minutes until the lentils are tender. Serve with basmati rice, mashed potatoes, or quinoa.
