Gužvara Walnut Roll

A crispy yeast roll with aromatic walnut filling and cinnamon — a traditional Croatian dessert that melts in your mouth. Perfect with coffee or tea.
Ingredients
- 450 g Wheat flour
- 55 g White sugar
- 2 pcs Fresh yeast
- 0.5 tsp Salt
- 168 ml Milk
- 2 pcs Eggs
- 30 g Butter
- 140 g Walnuts
- 85 g Butter
- 85 g Brown sugar
- 1 tsp Ground cinnamon
- 50 ml Milk
- 100 g Powdered sugar
Instructions
- Mix together the flour, white sugar, fresh yeast, and salt. Add the warm milk, eggs, and softened butter. Knead the dough thoroughly for 10–15 minutes until smooth and uniform. Cover the dough with a towel and let it rise for about 2 hours until it doubles in volume. Then lightly punch down the dough and knead it once more.
- Divide the dough in half. Roll each half into a rectangle approximately 30×20 cm. For the filling, combine the finely chopped walnuts, softened butter, brown sugar, and cinnamon. Divide the filling equally and spread it evenly over each rectangle of dough. Roll each rectangle tightly into a log (as you would for a poppy seed roll) to form two long «sausages» about 30 cm each.
- Place both rolls side by side, touching each other, on a buttered baking sheet. Cover and let them rise for about 40 minutes.
- Preheat the oven to 200°C. Bake the rolls for 30–35 minutes until they rise and turn golden brown. The bread should sound hollow when tapped on the bottom.
- Remove the hot bread from the oven and brush the top with milk. Generously sprinkle with powdered sugar. Let cool before serving.
